Low Carb Recipe: Coconut Curry Shrimp

Low Carb Recipe Needs

          • Oil 1x tbsp (preferably Coconut Oil)
          • Shrimp 2lbs
          • Red Curry Paste 2 tbsp
          • Garlic Clove
          • Coconut Milk Cup 1
          • Fish Sauce 2 tsp
          • Cilantro 1/4 cup
          • Scallions Whites 4
          • Scallion Greens 4
          • Frying Pan

Preparing the Frying Pan

Put the oil, red curry paste and white scallions in the frying pan on medium heat and saute for 1 minute.

Add Shrimp & Garlic

Add the shrimp and garlic and cook it for 2-3 minutes. Stir occasionally, salt and pepper to taste.

Coconut Milk & Fish Sauce

Add the coconut milk and fish sauce. Mix them very well for about another 3 minutes until everything is mixed well and the shrimp is cooked.

Cilantro & Scallion Greens

After turning off the heat, mix in the cilantro and scallion greens right before putting the food in a serving dish. This will keep a fresh consistency to the food.


You can choose to cover them and let them sit for a few minutes after turning off the heat. This will let the veggies absorb the flavors of the coconut milk and curry a little more.

Enjoy this amazing low carb recipe with cauliflower rice if you totally need a substitute for rice when eating thai food.In my opinion, the shiritaki noodles make the best substitute for a carb in this meal.

    The Great thing about shrimp is that it goes with so much. Just like in the movie Forest Gump, Bubba keeps sinyag how you can use shrimp for anything. I love that part of the movie because its so true. You can serve shrimp with a crisp white whine with the shrimp cold, say a shrimp cocktail, or have a nice Meritage wine with it with these coconut shrimp or a pasta dish.
