Low Carb Recipe Needs
- Broccoli
- 1 garlic clove
- 1/2 onion
- 1 cup heavy cream
- 8oz block cheddar cheese
- 2 cups chicken broth
- Salt & pepper to taste
- 8oz cream cheese
- 1 stick butter
Cut the Broccoli & Cheese
For a simple low carb recipe, this is probably the hardest part! Cut the broccoli at the top. You can leave it either in big pieces, or cut it completely at the top so only the flower portion is in the soup. It’s totally up to you.
Begin cutting the cheese into 1×1 inch blocks. The type of cheese should be full fat cheddar, but the type of cheddar doesn’t really matter.
Cook the Garlic & Onion in Butter
Cut the garlic and onion into little pieces. Add them to a frying pan with 1 stick of butter and let them cook on low heat until they are tender. You can choose to add the salt and pepper now or later after all the ingredients are together.
Cooking the Heavy Cream
Heat up a cup of heavy cream, until it simmers. Make sure you heat this up separately so it doesn’t disturb the consistency of the soup.
Cook the Soup
Put two cups of chicken broth into a pot and add the broccoli. Once the pot comes to a boil, add the cheddar cheese and stir until fully melted. Next add the cream cheese and the onion, garlic, and butter mixture. Stir until the cream cheese is fully melted. Add the heavy cream last and stir for ten minutes on medium heat.
If you haven’t already done so, add salt and pepper to taste at this time. Cover it and let it simmer for an additional two minutes. Stir, serve and enjoy!!
